Just in time for resolutions and back-to-the-gym season – here’s a delicious low-calorie roast beef sandwich recipe with prepared horseradish sauce:
Ingredients:
For the Sandwich:
- 4 slices of whole-grain or whole wheat bread (choose a low-calorie option if available)
- 8 oz (about 225g) lean roast beef, thinly sliced
- 1/4 cup horseradish sauce, see below
- 1 cup fresh spinach leaves
- 1/2 red onion, thinly sliced
- 1 medium tomato, thinly sliced
- Salt and black pepper to taste
For the Horseradish Sauce:
- 1/4 cup non-fat Greek yogurt
- 2 tablespoons Dennis’ Original prepared horseradish
- 1 teaspoon Dijon mustard
- 1/2 teaspoon lemon juice
- Salt and black pepper to taste
Instructions:
- Prepare the Horseradish Sauce: In a small bowl, combine the non-fat Greek yogurt, Dennis’ Original prepared horseradish, Dijon mustard, and lemon juice. Mix well until all ingredients are thoroughly combined. Season with a pinch of salt and black pepper to taste. Adjust the horseradish to your preferred level of spiciness. Set the sauce aside.
- Assemble the Sandwich: Lay out the 4 slices of whole-grain or whole wheat bread on a clean surface. On two of the slices, spread a generous amount of the prepared horseradish sauce.
- Add Roast Beef: Evenly distribute the thinly sliced roast beef on top of the horseradish sauce-covered slices of bread.
- Layer with Vegetables: Place a layer of fresh spinach leaves on top of the roast beef on each sandwich. Add thinly sliced red onion and tomato slices on top of the spinach.
- Season and Close the Sandwich: Sprinkle a pinch of salt and black pepper over the vegetables. Top each sandwich with the remaining slices of bread to close them.
